WINE MAKING
During several years the grapes were harvested by hand, but due to the difficulties of finding reliable grape pickers, in 1996 Yves decided to invest in a mechanical grape harvester.
Thanks to the progress of these machines and provided the condition of the grapes is perfect at the time of harvest, mechanical harvesting has no negative impact on the quality of the wines.
Also our latest harvester is fitted with a sorting device which delivers only healthy grapes to our winery.
Our grapes are vinified in the traditional manner, temperature controlled, in order to produce wines typical of our terroir and region. We avoid methods such as thermovinification which produce uniform wines without character.
The winery is equipped with tanks made from different materials (stainless steel, coated steel and concrete) allowing easy cleaning using natural products.
Once vinified, our wines are kept in tanks (cuves), or in oak barrels for certain wines, whilst subject to various operations such as racking, assembling and filtration in order to prepare them for bottling or bag in box.
During 2018 the domaine has enlarged it's winery in order to:
Increase it's tank capacity for vinification.
Receive the harvested grapes at precisely the right moment especially when different varieties are reaching maturity at similar times.
Allowing macerations of sufficient length to produce the best quality.
Create a premises for our bag in box operation and our own bottling line. The Cuve Primeur 2018 was the first to be bottled at the domaine using this new facility.
Construct underground storage for longterm aging of certain bottles and cuves.
